Spiced Pork Tenderloin with Sauteed Apples

A Healthy meal in under an hour.


Spiced Pork Tenderloin & Sauteed Apples

Ingredients:
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Cooking spray
1 pound pork tenderloin, trimmed and cut into 1 inch pieces
2 tablespoons butter substitute
2 cups thinly sliced unpeeled organic Braeburn or Gala apple
1/3 cup thinly sliced shallots
1/2 teaspoon salt
1/4 cup apple cider


Preparation:
1. Heat a large cast-iron skillet or dutch oven over medium-high heat. Combine first 4 ingredients; sprinkle spice mixture evenly over pork. Coat pan with cooking spray. Add pork to pan; cook 3 minutes on each side, or until desired degree of doneness. Pork will release it's own juices as it cooks. Remove pork and juice from pan; keep warm.

2. Melt butter in pan; swirl to coat. Add apple slices, 1/3 cup shallots, and 1/8 teaspoon salt; sauté 4 minutes or until apple starts to brown. Add apple cider to pan, and cook for 2 minutes or until apple is crisp-tender. Stir in thyme leaves. Serve apple mixture with the pork.

Green Beans Almondine

Ingredients:
1 pound organic green beans, washed and ends trimmed
1/2 teaspoon butter substitute
1/2 cup almonds, chopped
2 garlic cloves, crushed and chopped
1 medium onion, chopped
2 cups water
1 teaspoon salt
1/2 teaspoon

Preparation:
In a medium-sized skillet, bring water to boil. Add in green beans and let steam for about 2 minutes. Drain water and put green beans aside. In the same pan, add 1/2 tablespoon of butter substitute and coat pan. Add green beans back into pan, cook for about 4 minutes to start browning, stirring occasionally. Add onion and garlic, stir in with green beans and sautee together for 3 minutes as onion begins to become translucent. Add almonds, cook for about one minute, stirring constantly.
